Onion, Cucumber, + Tomato

One of the biggest problems with people’s diets is the tendency to eat less fresh food. Fanatics will often take this to the extreme and practice diets like total raw diets, which is an overcorrection that can actually cause its own problems. But, there are natural compounds in some fresh foods which are especially healthful and can work to help reset your gut microbiome in a way that helps us lose weight and restore our metabolic health. Foods like onions and garlic are especially good when raw, but just eating them raw is so unpleasant that compliance is unlikely. Instead of going crazy and supplementing raw garlic every day, make this delicious onion, cucumber, and tomato salad. You’ll get more out of it anyway since the cucumber and tomatoes also have helpful compounds in them as well.

ONION, CUCUMBER, + TOMATO

2 large organic yellow or sweet onions
1 large organic cucumber
1 package organic cherry or grape tomatoes
4 tsp organic sugar
1/2 tsp salt
1/2 tsp black pepper
3 tbsp white or red wine vinegar
3 tbsp olive oil
1/4 cup dill (optional)

An hour ahead of serving, slice onions in half then slice again in thin strips. Sprinkle with sugar, toss, cover, and set in the fridge for at least 30 minutes. This will get rid of some of the onion’s harshness. When the onions are ready remove from fridge, chop up cucumber, half the tomatoes, add all the ingredients to the onions, toss, and serve.
